Incredible Bordeaux wines from Chateau Haut Grelot leads the way with Julien Bonneau
Today Chateau Haut Grelot’s Julien Bonneau visited to talk Bordeaux winemaking, their legendary wine region, his family’s pioneering legacy, his favorite food and wine pairings.
Can you tell us a little bit about what inspires you about the wine business? Maybe a memory or wine celebration.
Julien: As you imagine in Bordeaux, or even in France, most of the wine business is a family business. It’s very father and a son or daughter. There’s always this kind of takeover.
I grew up with my father and he was always into wine, tasting wine. ’Oh, you should smell the wine and making me discover the wine from when I was a very young child. And so I didn’t want to take over the company.
I didn’t wanna take over the story about the wine, but I had one weakness: I love wine actually. I like wine very much, so it was very hard to say no.
I don’t want to take over. But I like wine anyway. I went to business school. I went to New Zealand and England to learn the wine trade. It was a very nice experience.
Then I came back to the wine business and started again to make wine, to discover the wine business through the company. That was probably my first step. When you start taking a foot in the wine business, then you never go back.
Obviously, it’s a passion to grow and grow because making wine is like growing a child. You start from the vineyard and then you go to making wine and then to age the wine in barrels. Then you put it in a bottle just to show your wine to your customers.
Looking at your winery’s history. 1920, 1927 was a big year for your vineyard. 1975 was a big year for your father.
Can you tell us a little bit about the background of the vineyard? Up to the more modern technology your vineyard has pioneered.
I’m the fourth generation in my family’s wine business. So my grandfather used to have cows for breeding. Vineyards, asparagus, as well. So it was just a culture after the war.
My father started in 1978 and he focused on the wine business.
He wanted to make and grow quality wine. Very tasty wine. [His goal] changed a lot of things about the process of winemaking to develop very aromatic, long aging. So we started to make a range of wine: white wine, rosé, a bit sparkling as well.
He went to see the customer directly in the north of France, in Europe. He tried to sell directly and not through negociants. That’s the main story because in AOC Blaye which is north of Bordeaux on the right bank of the river, negociants were necessary through the distribution to sell the wine.
The big challenge was, ‘No. You don’t want to pay more for my wine, I’m going directly to the customer. I don’t want to go and to carry on sitting through a negotiation because you don’t trust me on quality wine and you don’t pay more for the wine. So we’ll stop sending to negociants. And go directly to the customer, private customers, wine shop, restaurant, wine importers.’
That was 1984 and 1985. It was a very different direction. It changed a lot compared to what happened in Bordeaux at that time. We started to control our distribution. From that time, he developed a lot of quality wine, he invested in new vineyards, bigger and bigger, and also buying some barrels and new equipment to make very good quality wine.
He loves saying ‘I was the first in 1990 to make green harvesting.’ Green harvesting is cutting some grapes in August. So one month earlier than the harvest to remove a bit of quantity and to make better quality. So he removed grapes in the vineyard to produce better concentration on the grapes left on the field.
That was his focus, it was an improvement in quality wine. From that time, we carried on. What I changed is, I make more wines, different wines, different quality wines. But still focusing on quality wine. I do more than 30 wines – different quality, colors, and winemaking process.
Let’s talk about your region, and how those elements inform the wines that you’re making?
Julien: We are located in AOC Blaye, north of Bordeaux, one hour driving up.
On the right bank of the river. So opposite to Saint-Estèphe, you have AOC Saint-Estèphe, you cross the river, the main river, and you are in AOC Blaye.
Where we are located we are mostly very gravelly. We have two types of terroir. For the red grapes Merlot, Cabernet Sauvignon, Cabernet Franc, Malbec.
Gravelly soil to help have early harvesting and early maturation for nice harvesting. The second is more on clay soil, for the Sauvignon Blanc for the Semillon and Muscadet to make more powerful wine. Two very distinguished terroirs.
The climate is very moderate, oceanic influence but also very warm during the summer. We are very hot right now. It’s a very hot summer so that’s helped a lot to have very ripe grapes.
North of Bordeaux is quite hilly so it helps to have very nice exposure to the sun. For us, it’s very important to have ripe grapes. So we need to look for the sun and remove the leaves in front of the grapes. It helps to keep the freshness in the wine and still have very ripe grapes.
Let’s talk about your winemaking process.
AOC Bordeaux or AOC Blaye Côtes de Bordeaux, we have very strict rules. We need to have the vineyard on a hill. You need to respect 6,000 bottles per hectare of production.
Then we have nine months of winemaking before bottling it. So for us we make one year, even sometimes two years after, focusing more on quality wine.
AOC rules are just a basis. We try to make higher quality by aging and also to decrease the quantity of grapes per hectare to focus on sun contact for the grapes to have very ripe and very juicy grapes before harvesting. So we are very much challenging and controlling this aspect.
For example, in September, I walk every day, all my vineyards, just to check on the quality.
We try to get the aroma window. According to the evolution of the aroma on a grape, on a palate, we say ‘the window is there’, so we need to get it. It’s not only analysis from a laboratory, but it’s mostly from the palette. ‘How’s it taste?’
It’s the same as when you cook, you taste your sauce all the time.
Let’s talk about your wines. Can you talk us through some of the wines that you have?
Première Cuvée Red 2020, Blaye Côtes-de-Bordeaux
Ruby red in the glass. Lovely nose with red berries, vanilla and spicy flavors. Very drinkable. Fruit forward with medium body. Well-balanced with long and aromatic finish
Château Haut Grelot Sauvignon Blanc Côtes de Blaye 2022
Classic Bordeaux blend: 90% Sauvignon Blanc, 5% Sémillon & 5% Muscadelle. Floral, crisp, elegant. Exotic fruit on the nose with grapefruit and wild herbs. Generous citrus on the palate. Full body, almost velvety with a decadent finish.
Perfect to pair with seafood, chicken, fresh salads and cheese boards.
Pin Franc Red 2020, Blaye Côtes-de-Bordeaux
Big gush of red fruit, red currant, raspberry, blueberry on the nose. Big body, well-balance. Very muscular with silky and structured tannins. A long finish.
Enjoy as an aperitif or pair with game, pigeon, lamb, turkey, or as a dessert with chocolate.
Chemin de l’Estuaire Red 2020, Blaye Côtes-de-Bordeaux
Powerful, bold, muscular. 100% cabernet sauvignon. A v ery special bottle, aged for 16 months in small oak barrels. A lush, velvety mouthfeel with medium tannin and a long, vanilla finish.
Boir Pour Voir 2020, Blaye Côtes-de-Bordeaux
100% Sauvignon Gris
On the nose, citrus and orange zest aromas. Light body, light tannin. A tart bitterness on the palette with medium finish. Enjoy as an aperitif, or pairs with hard cheeses and desserts.
Julien: We have a wide range of wine. But I’m going to start with…
[Première Cuvée Red 2020, Blaye Côtes-de-Bordeaux, red wine]
Which is very fruity wine. This one is more classic Bordeaux style.
For the white is [Château Haut Grelot Sauvignon Blanc Côtes de Blaye 2022].
For 90% and very fruity, juicy, very aromatic fruit, grapefruit, and also passion fruit and it’s very easy drinking very easy drinking, very crisp.
The red is 70% of Merlot, 30% of Cabernet sauvignon. Wine aging on the lees a bit just to bring a bit of fatness. Strawberry character.
Both wines are very drinkable. Don’t need to age too much. Lovely with sushi, seafood, tuna, all fish. It works pretty well with meat. So that’s my two first classic range of Bordeaux style.
Then I have Parfum, which is 100% Malbec. [Chemin de l’Estuaire Red 2020, Blaye Côtes-de-Bordeaux]. Fruity, easy drinking, not too heavy as Argentina wines or Malbec wine. It’s more of a freshness and very licorice character.
The Cabernet Sauvignon is aged in barrels for one year, very select grapes.
We make a very good balance between the fruit from the Cabernet and the barrels. From aging typical from wine. That’s two different wines which is this one a bit more on the liquorized fruit freshness side, and this one is very elegant.
Lastly is orange wine. Bois Pauvoir, which is a sauvignon grape. [Boir Pour Voir 2020, Blaye Côtes-de-Bordeaux]
The story of this wine was Bois Pauvoir. It’s orange wine. I never made it before, but I wanted to make a wine which says let’s try to see how it’s going. And that means in French, “let’s try, you will see.”
Going back to cooking, what are some of your favorite things to eat with these bottles?
Julien: I’ll say for Sauvignon Blanc, this one is lovely with tuna. Rare tuna. Even tataki tuna. It has a very fresh character, very nice acidity and it’s very well matched with tuna.
This is one who can match pretty much with many things, but if you like pasta with tomato. Easy drinking freshness. Very drinkable. Not too heavy and you have acidity in a tomato with pasta and that keeps your freshness.
It pairs well with game. I like pigeon with a side of onions. Even lamb is very nice. It works pretty well with white meat. You can say beef as well. Roasted beef on a barbecue with carrots and peppers.
That’s very long, which is very a bit unusual, but it’s lovely with cheese. Even with fish in tomato sauce. Sea bass or grilled octopus. Yeah, it could be a very nice match.

Prosecco has gone from a little known mountain fizz to a vinous superhero, overtaking Champagne (and every other sparkling wine out there) and enjoyed by wine drinkers throughout the world, as the base of a cocktail or an everyday quaff.
But despite its huge popularity, most people don’t know much about it.
And there is much more to Prosecco than many people are aware.

Prosecco is produced only in Italy, in the Northern regions of Veneto and Friuli, and there are three official Prosecco appellations.
Prosecco DOC
One of them, Prosecco DOC, was created in 2010. It occupies a huge, mostly flat area encompassing almost two entire regions and accounts for most of the 700+ million bottles of Prosecco produced each year.
Conegliano Valdobbiadene Prosecco DOCG
Conegliano Valdobbiadene Prosecco DOCG is a tiny area in the foothills of the Dolomites consisting of 15 small municipalities in the province of Treviso. This is the ancient winegrowing area where Prosecco was born and made a miraculous comeback in the aftermath of World War II.
Besides its pedigree, there are numerous factors of the Conegliano Valdobbiadene enclave that distinguish it from any other winegrowing area in the world: complex and diverse topography, variety of soils, native grape varieties, distinct sub-areas, ancient history, and varied typology—bubbly, fizzy, and still; secondary fermentation in tank or in bottle, leaving sediment in the bottle (known as Ancestral Method) or removing it (Traditional Method).
In this class—which takes place right in the middle of National Prosecco DOC week—we will discuss the origin and evolution of Prosecco in the Conegliano Valdobbiadene area. We will also examine the two additional Prosecco appellations created in 2010.
But most of the time will be devoted to exploring and tasting Conegliano Valdobbiadene Prosecco through a lineup of 8 exceptional terroir-driven wines, in a variety of styles, that demonstrate the unique characteristics, complexity, and diversity of the original Prosecco.
Participants will also learn how to say “CONEGLIANO VALDOBBIADENE” like an Italian!
Alan Tardi has arranged a fantastic lineup of unusual and exceptional wines (half of them are coming directly from Italy) which demonstrate the various factors that characterize the complexity and uniqueness of Conegliano Valdobbiadene: Different production methods (“Tranquillo” i.e. still, Martinotti, Classico/Traditional, Ancestral); frizzante, spumante; single vineyards, Rive, native grape varieties; diverse, soils, terroirs and topographies.

A spectacular 2-day summer celebration, welcomed over 1000 cocktail enthusiasts and connoisseurs alike to the iconic Sheraton Saigon Grand Opera Hotel.
The vibrant cocktail carnival featured a dazzling array of over 130 cocktails from 36 premium global spirits, liqueurs and mixer brands.
A gathering of Vietnam’s top mixologists, innovative concoctions were expertly mixed by a combination of the country’s most respected bartenders and up-and-coming talents.

At the heart of the festival was a showcase of Vietnam’s craftsmanship and creativity, where seasoned mixologists flexed their skills to craft tantalizing libations.
From classic cocktails with a Vietnamese twist to avant-garde creations pushing the boundaries of flavor, each drink was a testament to the artistry and innovation within Vietnam’s ever-growing cocktail scene.
For guests inspired to continue the cocktail adventure at home, Mercantile Vietnam provided the option for attendees to purchase a bottle of their favorite brand from the event and have it shipped directly to their door.
Entertainment Extravaganza
The event’s charismatic MC Petey Majik led the carnival atmosphere and captivated the audience with a spellbinding magic show accompanied by igniting cocktail flaring performances from the talented Chương and Phước.
On Friday, the stage was taken over with a charismatic live performance from Vietnam’s premier DJ and saxophone duo Omar and Pierre. The party continued Saturday with the contagious energy of DJ PIA.

For spirits connoisseurs the festival also offered a wealth of knowledge with 4 optional interactive masterclasses hosted per day, where industry experts from Lady Triệu, Bruichladdich, Jose Cuervo, Highland Park and Lý Gia Viên shared their craft and insights with eager participants.
Luxury spirits aficionados could enhance their experience further and purchase tickets to enter the event’s Exclusive Room, featuring personalized tastings from 8 of the world’s super and ultra-premium brands, with a combined retail price of over 600 Million VND.
Competitive Spirit
One of the highlights of the festival was the highly anticipated Best Cocktail, Best Bartender and Best Brand Competitions with guests encouraged to vote for their favorites.
Bartenders from across the country battled it out for top honors.
With precision, flair, and a dash of showmanship, contestants dazzled spectators with their signature creations, showcasing the ingenuity and talent within Vietnam’s cocktail community.
On Saturday 15th June, the 2024 winners were announced: Mai Thanh Phong’s “Banh Mi Saigon” cocktail, made with Matusalem Rum, won Best Cocktail.
Nguyen Tuan Cuong, who works at Yugen Bar and is sponsored by Shanky’s Whip, was named Best Bartender. Also, Jägermeister was awarded Best Brand of the event.
Cultural Fusion
Beyond the cocktails themselves, the festival served as a social celebration of cultural fusion, from modern Vietnamese influences to global trends, the event highlighted the diverse tapestry of brands and the pioneering people shaping the country’s dynamic cocktail scene.

So as we just jump right in, Ira, can you give us a little background on you? What did do for a living before 120 life?
Sure. Most of my life has been writing and producing music. A lot of television commercials. The famous one is a Michael Jordan like Mike if I could be like Mike, which was just in the close the closing credits of the “Air” movie, and 30 years later.
Songs from McDonald’s for Disney, artists like Christina Aguilera, Regina Bell, Patti LaBelle, have recorded or sung my music.
The concept of how I got from there to a blood pressure drink is always like mind boggling to many, and including me, because it’s a path I never would have thought would have arisen to be honest, and it came out of a health issue, and it’s funny because you relate to blood pressure and music. There is a relationship because in music, you put things together. So let’s say I create a piece of music on the piano and say, okay, great. So now I’m going to get a, I wrote the music, I’m going to get… The bass player, I’m going to get the drums, I’m going to get the violins, and then I’m going to put it all together. And I’ve been doing that for many years, it’s like putting ingredients together. And a health issue my blood pressure had risen really high, dangerously high. And then we’re like you have to get this fixed.
If not, we’re going to have to do surgery. Because over time, the first thing anybody I think would do is say what if you have high blood pressure. What do you do? What do you eat? What do you drink? And when it came to the drinks, I kept reading about these things that they all have studies.
I was like, wait a minute. Pomegranate juice, I’m reading the studies. You drink it for six weeks. And one day it just struck me. If I take all of these ingredients, I think it’s like mixing a piece of music and putting them all together. I just knew in my mind they would work because I think the music related to the blood pressure and that’s how it all began.
You literally almost produced a beverage in the same way you produce music.
You brought in several elements together, let’s say drums, a guitar, a vocalist, all the elements of a band. You thought of it like that, but you found these superfood ingredients and said, gosh, these ingredients could all work together.
Yes, that’s 100% correct. Now what I was doing is that I think like I’m going to produce this drink like I’m producing music. No, but I’ve had a recording studio for 30 years of my life and I’m making music every day of my life.
It’s just secondhand nature to do things in combinations for me. So when I thought about it later on, I’m like, Oh yeah, that’s why it works. I saw the ingredients, they look the same. I knew I can mix them together. Just from my process of music. I think that’s what happened.
If you’re doing the music every day, do you think you use creativity to solve a health concern?
Yeah, I think on some level that’s what happened. I was looking at things and I saw it, but in a way maybe nobody else saw it. And I think when you’re a creative person, then that tends to be the, where you go first on some level. I’m always thinking of things from a creative standpoint.
Is there a life lesson at all in here for people, using creativity and trial and error and the confidence to try new things.
Yeah, it’s funny because I did this music project with music from the Holocaust. And we, I wrote the Carnegie Hall and we sold it out, beyond the most successful thing in my life. And I was sent to somebody, if I had to write a book about my life, I would title the book, “Everybody Says No”. And I think that’s the way, the mission of my life don’t ever let anybody stop your ideas. Ever.
If you are passionate about anything, go figure out a way to do it. And I think it’s a life lesson about creativity. What it is, go do it.
So from a step by step process, you have a doctor’s meeting, you’re told you have a health concern, can you just walk us through what those next steps were?
So the first thing somebody tells you, you have extremely high blood pressure. It has to come down. And most of the people I’ve ever met would say we know what high blood pressure can do.
But my question was not that. My question is what is causing the high blood pressure? What is it? My dad was a pharmacist; he knew about strokes and heart attacks. I was trying to figure out what it is and how do you stop it?
And the truth is even though the doctor is a friend of mine that they will basically go figure it out.
First thing I learned is to cut your salt. That was stop number one. Most studies show if you cut your salt, it will lower your blood. I’m just doing everything I can do, even taking medication. I’m going on a salt free diet for three weeks. So you have fruit, vegetables, but not just salt. Every cookie that has sodium, I’m not eating.
That was like step number one.
Then I’m Googling what are the best foods to eat? What are the best things to drink? And that began the process. Reading about these did lower my blood pressure to the point where they didn’t have to operate.
But you get stuck or passionate about some things. So every day I’m on the computer, looking up drinks for high blood pressure. Many of the same things come up, beet juice or beet powder, lowers your blood pressure. Hibiscus tea lowers your blood pressure. Pomegranate juice
I’m reading the studies. Then one day It just dawned on me. Wait a minute if all of these lower your blood pressure a little bit. Together, maybe it will lower it a lot.
I figured, somebody had done it. Not only was that not there. Even to this day, there was nothing there. Zero.
There’s 110 million people that have high blood pressure. And there’s nothing, there is not a drink out there with these ingredients.
Yeah. But that began the journey.
So on this journey you had different levels of support. You have a nutritionist in your life, Susan Schachter, talk about her involvement
So as I’m making this drink, [I’m thinking] what’s the best way for people to try it? So I kept thinking, okay, I’m going to make these jugs that contain 112 ounces. And I would give it to people that I knew had high blood pressure and say try it for two weeks. I’m doing that because one of the people I gave it to is my cousin who at the time was the sole distributor for Keurig the coffee machines and the K cups. I’m thinking okay I need to get him to distribute this drink.
So I gave it to him and said look if your blood pressure lowers from this drink, you got to promise me you’ll distribute it. He said, ‘Okay’, because he’s very skeptical and he thought there’s no way.
And sure enough, his blood pressure lowered 30 or 40 points. He said, ‘Okay, I’ll distribute it. But, what do you know about this stuff?’
My childhood friend Susan Schachter has a Master’s in nutrition. I sent her the drink. She made some tweaks and that’s how I got her involved.
Can we go through all six natural ingredients?
Let me start with beets; the superfood for athletes so I knew I was going to have beets in my drink.
Hibiscus tea has been around for years and have said a multitude of studies. even in the Middle East about lowering your blood pressure. I think some of the qualities are in medical terms that can act like an ACE inhibitor.
The third ingredient is pomegranate juice. It can act as a beta blocker. It has a lot of antioxidants. So I think those three were the really big things in the drink.
Susan added magnesium and potassium. It relaxes your blood vessels.
Through the studies, I was reading about cranberry juice and tart cherry juice, which has been used for recovery for athletes for soreness of muscles.
I enjoyed the taste. I’m always worried health products will “taste like science” Your drink doesn’t. What does it taste like to you and how do you recommend drinking it?
The most important thing is it can probably really help you. Some people really like how it tastes.
I say mix it with cranberry juice or put it in your smoothie, especially now we have a powder. So there are different options. I think the point is that high blood pressure is not something to mess around with. Too many bad things could happen.
Is there anything that you want to talk about?
We’re in a society where people age out, we become disposable after a certain age in so many industries, so I’m inspired by my own story, 60 years old rather than retiring or doing something I had the wherewithal to say, I’m going to do this, it’s never too late in life if you want to do things.
And I think that’s a message for a lot of people. Most people do not start a business at 60. But my thought is like, you have this passion, you have this dream, go for it. I’m very thrilled to just be a part of it. I let my CEO run it.
The second thing is that I, we always say to people, Susan always says, know your numbers. Be responsible with your health. Drink 120 life. Pomegranate juice. Beet juice, Hibiscus tea, Cut your salt. That’s my message.

We are here with Berk Bahceci from Heraclea Olive Oil.
Berk joined me for a conversation (via zoom). Below has been edited for length and clarity. Find the full conversation on our YouTube Channel.
I’m excited because I’ve tasted your olive oils and they’re subtle, they’re flavorful, and there’s a great story behind them. And today I wanna touch on all of that and a little bit more.
Tell me a bit about your background and how you got into olive oil
Berk: Sure. I moved to the United States approximately 10 years ago for college. Actually. That’s how my story here started. I studied economics at UCLA and then I went to law school at UC Berkeley.
But the day I started law school, I realized something was off. I started questioning whether I was the material to be an attorney. Three years passed by. I took the bar exam and started working. In my first year I realized, I don’t want to be a lawyer anymore.
I started looking for an exit plan. So I reflected back on myself, my life, my childhood. What is one thing that would make me wanna wake up every day with excitement?
I realized olive oil is out there. My family owned some olive groves before, but we were never doing this with a business mindset. It was just produced and consumed within family and friends. I came up with the idea to tell my family, why don’t we turn this into a business, create a brand around it, and sell it here exclusively in the United States.
The market itself is very dominated by a couple big players from certain countries.
I did more research and realized that Turkey is the fifth largest importer of olive oil into the United States, but you are not seeing any Turkish brands on shelves.
What’s the reason for that? It’s probably because producers in Turkey don’t have the means to come here, establish a distribution center like channels, and move product. Selling in bulk is the easiest and most convenient way for those people.
But I wanted to bring a new way for the Turkish olive oil in the United States with Heraclea that’s how we found it.
We’re definitely gonna get into Turkey in a second. A lot of the people watching this are wine lovers. Region is very important. So tell us about the region that you’re farming
Berk: Region has an impact on olive oil as well. That’s the reason why the European Union has a scheme called Protected Designation of Origin. I’m sure wine lovers and cheese lovers will know, when I say PDO, the red and yellow emblem that you see on certain products sold in specialty food stores.
PDO is basically a stamp given by the European Union, to distinct products. What do I mean by that? So the variety of olive that we work with is called Memecik. There are over 2000 olive varieties in the world.
Do me a favor, say that variety again and spell it for us.
Berk: It’s called Memecik. It is very unknown, very rare because it is specific to the region that we produce.
And that’s why the European Union has given a couple years ago to this region and this olive variety, A P D O certification. For example, in California most growers are bequia, right? If they were to plant Memecik, which they can, in California, they won’t be able to have this PDO certification.
So PDO only comes if Memecik is grown in Milas. That’s a very special thing for us and we are very proud to be working with a very rare variety. So when you buy olive oil, it is for certain that you won’t taste it with any other brand because it’s distinct to Milas.
Just the same way that champagne only comes from the Champagne of France.
Berk: That’s exactly what I was going to say.
When did you realize the magic and the power of the Memecik varietal?
Berk: This PDO certification is so new that we did not found this business upon that, that certification. It was just an added value with the PDO, but we always knew that our olive oil was distinct in its quality.
It has actually recently been approved by International judges in New York International Olive Oil competition, Japan Olive Oil Competition, Istanbul Olive Oil Competition. We got gold and silver medals from all of these. And this is the first year that we are actively participating in these competitions.
It’s a really good moment for us because usually these things don’t happen in the first or second year. [Usually] you’re a producer for multiple years or maybe generations. So we’re really proud about that.
Congratulations. And just to give someone listening or watching an idea, the scale of these competitions.
Can you estimate how many different olive oils are in that competition?
Berk: I would say in the thousands, 2000. Maybe a hundred companies are winning these awards. You’re in the select field of the top 5-10% in the entire world.
The panel is composed of people from all around the world, from all producing regions, Italy, Tunisia, Greece, Turkey, Chile, Argentina. Experts. So it’s a good indication that the product is at a certain level of quality.
So let’s talk about the behind the scenes and the process of making this award-winning olive oil.
Berk: We have around a hundred acres of land with over 10,000 trees that we take care of with a team of seven full-time on the field every day. We don’t use any fertilizers, we don’t use any pesticides. We don’t use any chemicals. One reason is our grows are literally on the on mountains. They’re not plantations.
Many olive oil brands have what people call “olive farms” where the companies do intensive and super, super high density farming, which means that where maybe 10 trees would go. They plant a hundred trees. So it’s very compact, producing very high yield olives, but lacking taste because they’re fed with irrigation all the time.
So the olives get really big when they’re given water every day, whereas our olives don’t have irrigation because it’s on the mountains. Our olives, in comparison, are relatively smaller, which keeps the aroma very vibrant. That’s actually the secret behind it.
A lot of people who taste our early harvest olive oil say that it’s a little bit bitter, especially right after the harvest. That comes from the antioxidants that are loaded in it. Because our olives are very small. The density of antioxidants is higher, so that’s why the bitterness comes in.
We just prune the trees, cutting the excessive branches because we’re working in a very scarce, nutrient environment. Like I said, no fertilizers, so you have to keep the trees very optimal by cutting the unnecessary trees and branches so that whatever there is in the soil goes to the fruit.
That’s why our team of seven constantly does these kind of things. These kind of physical touches, no like chemical alteration or anything. Around October we start walking around the grow to determine the day of the harvest. That is the most exciting time of the year
Due to not using fertilizers, we really have to optimize the day of the harvest to maximize our production. So when we determine that day, which is mid-October, usually we start harvesting.
We hire local men and women who are living in nearby villages. We go in with a team of 20 to 30.
We keep it for 90 days until January. We don’t want to go into January. Because fruit flies, conditions and a lot of other things impact the quality.
So we try to finish everything from mid-October until January. We work with a local mill to process our olives. We take two batches every day, one in the afternoon and one at night because we don’t wanna wait in between.
If you start harvest at 8:00 AM and harvest until 4:00 PM the olives that you have harvested at 8:00 AM will have waited nine hours before going into the processing machine. We don’t wanna do that because as the olive waits, fermentation starts and the quality decreases.
So we do two deliveries every day to the local mills, one in the afternoon, and one later in the day. This way we ensure that our olives go right into production within two to four hours of harvest. Believe me, we’re working really hard to maintain that.
Then we store our olive oil in stainless steel tanks in temperature and humidity controlled rooms with nitrogen gas used as a buffer between the olive oil and the rim.
Think of a five ton tank. You fill it out, but there’s always some portion of the tank that is left empty and there’s oxygen in that empty part. When olive oil touches with oxygen in the stainless steel tank as it is stored, oxidation starts, which leads to rancidity, which decreases the quality of the olive oil. So we take that oxygen out by pumping in another gas – of course, food grade safety, no worries there.
That’s the level of attention and care we give to our olive oil.
Let’s switch to the the tasty part. Let’s talk about the flavor of your two bottles. Flavor profiles, aroma, anything you’d like.
Berk: So we have two products right now. We’re bringing in a third one soon.
Olive oil is the white bottle which is made from olives that we harvest starting from October until mid-November.
And the moment that we switch from early to mature harvest is when the olives start turning into this purplish color. As months pass the green olives start to ripen and then change in color. When we see that change into purple, that’s the moment we say, okay, early harvest is done.
Now we’re doing mature harvest and then everything else that we harvest mid-November, till January, is considered mature harvest. That’s the distinction between the two.
The mature harvest is the black bottle. And when it comes to flavor profile, there’s one disclaimer that I wanna make, uh, in general about, uh, these, uh, like.
Flavor profiles. I think to really understand and feel and get this smell. In any olive oil, you have to have a sensory memory, have that experience in your mind, I still remember it.
Here’s an example from my sensory memory:
We had a walnut tree right across the street by our house, and there was a fine paper-like cover, outside of the walnut. Right before they mature, we would take from the tree and taste it and it’s bitter. So that [bitter] taste is in my sensory memory right now.
Same as tomato stems. Like if you touch a tomato plant with your hands and play around and then smell your hands, you’re going to get a very unique tomato stem smell, and that’s like embedded in your mind now. So from now on, every time you taste an olive oil, if there is that distinct smell or taste in it, that’s how you recognize it.
So in our olive oil, early harvest, for example, I get the notes of freshly cut grass, tomato stems, walnuts, banana.
What I was told in this olive oil school that I went to in Spain is, get your hands out there. Touch everything, smell everything. Taste everything. That’s how you develop your sensory memory.
And that’s how you become, as people say, familiar. But you know, like you don’t have to have a certificate to be one. You know, you just go out there and taste stuff and try to. Memorize and remember those smells and tastes.
I was talking to somebody earlier this week about food pairings and he had a similar answer, which was be curious.
Exactly. Taste things, touch things, smell things, and be curious.
I know your website has a cookbook, let’s talk about some of your favorite food pairings with your olive oil
Berk: I love drizzling our early harvest on cheese plates. That’s my favorite thing. Early harvest is more for finishing dishes because it has a bitter aroma to it.
If you cook with it, you may have a bitter taste in the food. Actually, I know people who cook with our early harvest. I know people who drizzle with our mature harvest, so it’s not set in stone.
It really depends on what you like, but generally, early harvest is better for drizzling over salads. Hummus, cheese. Sometimes I dip my bread in it.
That’s a tradition we have in Turkey sometimes, find a piece of bread and dip that into your olive oil, and that’s a good breakfast.
Mature harvest is for everything else. Cooking, baking, marinating. A lot of people are saying that they use it for marinating.
Anything else you want us to discover about olive oil?
Berk: Our goals are twofold. One is, olive oil is a very healthy product for human consumption, There is research showing that the positive effects on health of olive oil, daily consumption of olive oil. We believe that a product that is so healthy for humans should do no harm to the environment.
It’s production should not cause any more trouble to our Mother Nature. That’s why we’re not using fertilizers. That’s why we’re not using pesticides. We think there’s a solution in nature to resolve any problem that these things claim to be curing. That’s number one, producing as environmentally friendly as possible.
Number two is to introduce to the world the intricacies of Turkish cuisine. It is beyond just kebab. It is just one meal in thousands of distinct and unique recipes. And the way that we treat these recipes are not just a list of ingredients.
To us, these are stories from past generations and that Turkish cookbook has 550 very distinct recipes. Each recipe is associated with a specific region or maybe sometimes even a village.
It almost sounds Farm To Table.
Berk: Exactly. That’s the goal. We’re small batch and we have really certain values and principles.
Are there any specific health benefits that you wanna cover?
Berk: There are a lot. There are a lot of research. I’m not a scientist. I’m not a doctor. But consuming olive oil daily helps with chronic diseases. Cardiovascular diseases. Type 2 diabetes, and many more.
We have lab reports showing the amount of antioxidants in our olive oil, which is around 500 milligrams per liter, which is a high amount. Consuming antioxidants is healthy. Olive oil has anti-inflammatory effects as well.
When you consider all of these things and if you consume fats, why don’t you switch to a healthy alternative where research shows that its consumption helps you.
That’s why as a layman I recommend consuming olive oil on a daily basis.
Berk, you’ve given us a lot of good information. You’ve given us a lot of tasty ideas.

NYC Foodies Head to Colorado: Winemaker Ben Parsons from The Ordinary Fellow reveals wine, food and nature

Just to touch on background a little bit, you were the winemaker and founder of a very successful urban winery, the Infinite Monkey Theorem.
Then you chose to move on to where you are now at The Ordinary Fellow.
What was that transition like for you?
Ben Parsons:
The Infinite Monkey Theorem was really about disrupting the wine industry and trying to make wine fun and relevant and accessible.
We were the first ones in the U.S. to put wine in the can. We started kegging in 2008.
It was really about creating these urban winery spaces, just a tap room for a craft brewery in a city where everyone could come down and enjoy.
After 11 years of taking that to a 100,000 case production distributed in 42 states, there was a really good opportunity for me to get back to what I wanted to do, which is being in a vineyard.
Even though that might sound like a cliche, there is something quite romantic about farming and being surrounded by nature and really trying to make the very best wine you can from Colorado fruit that you grow and putting it in a bottle versus buying someone else’s wine and putting it in a can, they’re like two very different things.
I had an opportunity to take over a vineyard in southwest Colorado down in the Four Corners just outside of Cortez, where the Four Corners meet.
It was in disrepair and hadn’t been pruned in four years. So I got back in there and now it’s looking really good.
So that’s taken 4 years. Yeah it’s relatively small. It’s 13 acres of Riesling, Chardonnay, Cabernet Sauvignon.
Sits at 6,000 feet elevation. So very high for a commercial vineyard. And it’s beautiful.
It sits on a national monument called the Yucca House, which is an un-excavated ancestral Pueblan ruin from between the 10th and 12th century.
Starts at Mesa Verde, which most people are familiar with for the ancestral cliff dwellings from the Pueblans down there. It’s just a beautiful location.
Yeah, two very different things, but kind of coming full circle almost as to what I got me into the industry in the beginning, back in the late 90s.
And now back there, but doing it on my own.
Palisade Colorado Winemaker Ben Parsons takes a Vineyard Tour
Joe Winger:
Your famous quote in the wine world: “I miss being in the vineyard”
So for our audience, who’s going to go to wine country this weekend or this summer, when they take a vineyard tour, what should they be looking at?
Ben Parsons:
As to how wine gets from a vineyard and a grape to a bottle. Most people think it just ends up on a grocery store shelf and that is not the case.
It’s really the idea that you could grow something from rootstock, farm it, suffer the vagaries of agricultural production, deal with all of those challenges, do it in a sustainable way.
Determine when you’re going to pick that fruit. Take it into the winery. Ferment it. Turn it into wine. Age it in a barrel. Bottle it. Decide on the branding. Decide on the naming. Come up with a label design.
Take it to all of those small awesome restaurants that everyone wants to hang out at because they’re making great food and getting good press.
You see my wine or I see my wine on someone else’s table, drinking it and to think where that came from.
And how many times those grapes got moved from a to b and then back, from b to c and then c to d whether it be like shoveling grapes with a pitchfork for a destemmer.
Or shoveling fermented grapes into a press with a Home Depot bucket.
Or picking that case up and taking it from here to here, that got handled so many times, so much went into that, that I think there’s a huge disconnect amongst most consumers.
Palisade Colorado Winemaker Ben Parsons on the Area’s Natural Beauty
Joe Winger:
You chose to be in Palisade, Colorado making your wine.
Tell us a little bit about the region and why someone should come visit you in Colorado?
Ben Parsons:
Palisade is beautiful. It’s on the Western slope of Colorado. It’s about a 4 hour drive West of Denver over the mountains.
About 4 1/2 hours East of Salt Lake City.
It’s an American Viticultural Area designate called the Grand Valley and it’s pretty stunning.
You come through this Canyon called the Back Canyon on the North side, you have these book cliff mountains that rise above you on the South side, you have the Colorado River, and it’s a very niche microclimate. It’s definitely an agricultural community.
What a lot of people don’t realize, because they just drive straight past on I-70 is it’s proximity to all things good, outdoorsy.
Within 28 minutes I could be at a local ski resort called Powderhorn. It got 32 feet of snow last year
I’m an hour and a half from Aspen.
I’m an hour and 20 minutes from Moab.
I’m a 10 minute drive from Fruita, which has the best mountain biking in the world.
It’s all old Indian territory. There’s wild mustangs up on the book cliffs.
It’s known for its fruit. It’s actually known for its peaches, believe it or not. Some of the best peaches grown anywhere in the United States. Arguably the best.
But it’s a very small microclimate.
Palisade is around 4,500 feet elevation. There’s about 26 wineries you can tour and visit. Take a few days, spend a weekend.
There’s some good local restaurants, growing their own produce and making real good farm to table food.
Grand Junction is a city that in the last 5 years has really exploded.
And Grand Junction is 10 minutes from Palisade. It went through a series of boom and busts during the oil shale boom business back in the day, but now it’s strongly focused on tourism.
Lots of people are leaving the front range of Denver, Colorado Springs and moving to the Western slope for a kind of quality of life.
Also we have a lot of California transplants because it is cheaper to live. You are outdoors all the time. You can travel long distances very quickly. I put 42,000 miles on my car this year delivering wine all over the state of Colorado.
I feel like the state and this particular area has a lot going for it. Definitely more than enough to fill a long weekend or a week’s trip.
Exploring vineyards, food, farms, outdoor opportunities.
Taking a trip to Moab, it’s really pretty. It’s one of the reasons I moved here.
I’d been in the city for a long time. I grew up just South of London in England, but I lived in London for some time and I loved it when I was young. I love Denver as well.
When I started the Infinite Monkey Theorem, that was really when a lot of people were moving to Denver and it was becoming something substantial.
It was one of the fastest growing cities in the country at that time.
I feel like we were a big part of pushing that growth and in tandem with the other food and beverage scene, like craft breweries and good restaurants.
Joe Winger:
You’ve mentioned different restaurants and food and dinner. Our audience primarily are foodies. We’re in Colorado for a wine weekend, we come to the Ordinary Fellow for a wine tasting.
Can you suggest a few places and different cuisines that are a must visit within 20-30 minutes of you?
Ben Parsons:
In Palisade there’s a good restaurant called Pesh. One of the former line cooks at a linear in Chicago started it with his wife, maybe 5-6 years ago. It’s excellent.
In Grand Junction, where most people stay there’s a few good restaurants started by this guy, Josh Nirenberg, who has been nominated for James Beard award several times for best chef and has one called Bin 707, Then he just opened a third called Jojo’s. He also has a kind of trendy taco spot called Taco Party, which is a fun name.
If you like craft cocktails, there’s a new place that opened called Melrose Spirit Company. Guy opened it in a hotel that was recently renovated. Really cute, really excellent cocktails.
Joe Winger:
Let’s get into the wine geek stuff now and talk about your vineyards. You have Colorado Box Bar, Hawks Nest.
So let’s talk through terroir, soil type, elevation.
Ben Parsons:
So Box Bar, It’s in Cortez, sits around between 6,000 feet elevation.
It’s on this weatheral loam that has some clay in it, which has these water retention properties. It is essentially a desert. So you do have to drip irrigate, there’s less than 7 inches of precipitation a year.
So very little rainfall which is good in some ways in that there is very little disease pressure.
You’re not having to spray. There’s no necessity to spray for powdery mildew or anything down at our vineyards.
It’s essentially farmed very minimalistically.
Lagging very sustainably, which I know people appreciate.
Riesling, Cabernet Sauvignon, Chardonnay. We’re just planting some Chenin Blanc and some Charbonneau, which is an italian red varietal as well.
Hawk’s Nest is not my own property, but I work with a grower called Guy Drew who planted four different kinds of Pinot Noir and two different kinds of Chardonnay there.
That vineyard is at 6, 800 feet and that is the highest commercial vineyard in North America.
Similar soil properties as the Box Bar. Making some really good Pinot Noir.
I think what’s interesting about Colorado is we have a very short growing season, 155 – 165 days. Napa has 240 days. That’s frost free days.
So the thing is that we have such high sunlight exposure because of the elevation and the ultraviolet light that we have the same number of degree days as Napa Valley. So we can ripen like Cabernet Sauvignon, but we’re ripening it in a shorter period of time. That’s fairly unique.
The Ordinary Fellow is really focusing on traditional French varietals from Chenin Blanc Chardonnay, Cabernet Sauvignon, Syrah.
Most recently we took over a vineyard in Utah so I’m actually farming a vineyard about 1 ½ hour drive from Moab called Montezuma Canyon Ranch.
That’s this ancient sandstone with a little bit of clay in there that was planted in 2007. 12 acres of Chenin Blanc, Merlot, Riesling Chardonnay. We made an awesome Utah Rosé vineyard last harvest 2023, which we just released.
You don’t see that many wines from Utah so that’s why I’m excited about it.
I think there’s only 6 wineries in Utah and I’m not sure that many of them get their fruit from Utah.
Joe Winger:
You mentioned that you have one of the highest peak elevation commercial vineyards in North America.
What are the benefits and the disadvantages to such a high elevation?
Ben Parsons:
If you think about spending any time on a mountain, it can be really warm, but as soon as the sun goes down, it gets very cold.
So having high elevation vineyards, even though you might be in a quite a hot growing region as soon as the sun goes down, the temperature does drop.
You have a large diurnal temperature shift.
So in Cortez, in the growth, during the growing season or during ripening, say late September, mid September, late September. We could be 85 to 90 in the day, but 45 to 50 at night, which is a really big temperature swing.
It basically means that the vine has a kind of chance to just shut down and rest.
From an enology perspective, you can retain more natural acidity in the fruit because it’s not being metabolized by having a lot of sunlight constantly and higher temperature. So we don’t have to make any artificial acid additions or anything like that you may have to do in more established wine regions in the United States.
Our wines all have really great balance to them and really good acidity. None of them are overdone. They’re not big, jammy, overly alcoholic.
They’re all well balanced between acids, tannin, alcohol, sugar, but they’re all bone dry.
There is no fermentable sugar in any of them, which leads to palate weight and mouthfeel, but but they’re not sweet per se.
Even my Riesling is bone dry.
Joe Winger:
During the Infinite Monkey Theorem days you led the canned wines movement.
How does it feel seeing it become so incredibly popular and any big lessons you learned from that experience?
Ben Parsons:
I genuinely believe that [we led with canned wines]. In 2009 we entered into a R and D project with Ball Corporation, the largest supply of aluminum cans in the world.
To figure out how to can wine and everyone thought it was stupid and everyone just turned their noses up at it and thought that RTD wine and RTD drinks were stupid.
It’s a tough question because I think that canned wine is good because of its use application, primarily. Where you can take it and where you can drink it.
Now, very rarely do I see people putting the best wine they’ve ever made in a can. So I think it’s all about where you want to drink it, who you want to drink it with. There’s definitely this kind of utility aspect to it.
Also price point wise, you don’t see that many canned wine, four packs above $16,
I would say so. Yeah, price wise, it’s fairly economical from a sustainability perspective. It makes a lot of sense.
But from an absolute quality perspective, you’re probably still going to be buying bottled wine over canned wine.
It’s all about where you’re going to consume it.
Sometimes when I see it I think about when you start any category, there’s always those people that are out there doing it way before anyone else is doing it. It’s those people that usually don’t reap the benefits of it because they put all of the effort into it.
I look at LinkedIn occasionally and I’m just baffled by people that think that it’s a new thing. It just blows my mind.
Joe Winger:
You have an excellent sparkling wine and you’ve mentioned England’s excitement about the sparkling.
Why is England falling in love with sparkling wine? And why should all of us be falling in love with sparkling wine?
Ben Parsons:
Historically, England has consumed a lot of sparkling wine.
But in terms of actually growing grapes and making their own sparkling wine, that’s happened in the last 20 years.
That’s one of those unfortunate advantages of global warming in a kind of isolated geographical area that previously, you wouldn’t have been able to ripen Chardonnay, Pinot Noir, Pinot Meunier.
It would have been a challenge making really good sparkling wine in Kent and Sussex and Southeast England where a lot of it is made.
But with a few degrees temperature rise, that’s now possible. And it’s the same chalk escarpment as champagne. They’re very close to each other.
They’re just separated by 24 miles of the English Channel, right?
So they’re actually geographically very close to each other a little further than 24 miles, but climatically very similar.
So actually, a lot of French champagne houses have bought up land in Kent and Sussex over the last 20 years and have been planting that, and now some of the bubbles are coming out.
Joe Winger:
When I have an opportunity to speak with an Oregon winemaker, we often talk about the challenges based on their region. Do you feel like you are also in a region [Colorado] that’s more problematic?
Can you share a lesson you’ve learned from solving some of those problems?
Ben Parsons:
The whole industry because of the shortness of the growing season, it’s always on a knife edge because you can have late spring frosts that can come through a bud break and just wipe you out.
But you can also have these freak-like early winter freezes in October where there’s there’s still fruit hanging or maybe it’s just come off and it goes from 70 degrees in the day to 8 degrees suddenly, and the sap still flowing in the vines and then all of the vines, the trunks split, the cordon split.
That’s what happened in Palisade maybe 3 or 4 years ago now.
Then in Cortez where Box Bar is, last year we had a hailstorm come through just after the bud break. So our Chardonnay was out and got wiped out. Then the secondary buds pushed and we went from a crop of 36 tons to 10 tons overnight.
That’s just agriculture anywhere. Unfortunately that’s just one of the risks.
Joe Winger:
Let’s talk about wine. Their flavor profiles. The different bottles you offer.
When we come visit your tasting room in Palisade, Colorado any hints about what they should be excited to taste?
Ben Parsons:
Blanc de Noir
Yeah the sparkling wine, that’s Blanc de Noir, so that’s 100% Pinot Noir. That’s about as geeky as it gets, because that’s single vineyard, single grower, single clone of Pinot Noir. only 8 months in barrel. The base wine was barrel aged for about 6 months, and then it was entourage, lying on its utilise in a bottle for six months.
Then it’s put on a riddling rack and hand riddled one bottle at a time. Then disgorged by hand, just take the top off, put your thumb over the top of it so nothing comes out and then no dosage.
So again, just super geeky, like really bone dry, like really crisp, great acid. So that is that wine is super hands on.
It’s delicious. It still gets those more developed, brioche-y notes. Texturally it’s very pleasing on the palate. I think we make really good method champignons, bottle fermented sparkling wine.
Chardonnay
A lot of people these days think it’s trendy to not like chardonnay, because they heard somewhere about that, but there are actually some really good Chardonnays out there, which aren’t all aged in new French oak and haven’t all gone through like a creamy buttery secondary fermentation. And I think mine is one of them. It was aged in 8 year old barrels. So there’s really no influence on it at all.
It’s all hand harvested or whole cluster pressed. I think that wine has a really pretty texture, like this palette coating texture but it has really good acidity and it smells like a ripe peach or a dried apricot. It’s really pretty.
Pinot Noir
Our red pinot noir. Again that spent just 9 months in neutral barrels so I think there was a trend like 20 years ago to put everything in a brand new barrel and every winemakers thought it was cool, but you know in the last 5 – 6 years, I think that has changed
Winemakers are really trying to let the soil and let their vineyards speak for themselves.
Minimal kind of intervention to a certain extent. It is the trend.
Our Pinot Noir has done really well. It’s on the much lighter side. I would say it’s more like a German style Pinot Noir, like lighter with really good acidity, firm tannin. Beautiful aroma.
I think all of our wines are just very well balanced. Very food friendly, very clean. They’re not funky. I’m very proud of that.
Joe Winger:
I’m assuming balance and the clean is a style choice by you?
Ben Parsons:
Balance is easy because it’s done in the vineyard because of the elevation and the retention of acidity. It’s just about when you pick it. So you’re tasting [the grapes] for flavor and like phenolic ripeness and the seeds being brown, et cetera, but you’re also testing a few for your pH, your titratable acidity and your sugar levels. Then you make an informed decision as to when you’re picking it.
The cleanliness part of it really just comes down to the fact that I feel like winemakers, even though this doesn’t sound very romantic, you’re almost just like an insurance manager in that you don’t want to mess it up.
So you make informed decisions, preemptively. You top your barrels, like every 2-3 weeks, you do things to make sure the wine, does not end up flawed through a secondary characteristic developing.
Sometimes that’s a flavor enhancer and sometimes that’s good, but when it’s overdone… I believe there are a lot of wines that they get away with it these days. To me it’s just bad winemaking.
I’m definitely kind of a minimal interventionist
Joe Winger:
I always feel like white wine doesn’t get enough love and respect. People love talking about the complexities of reds. You make a phenomenal Riesling.
Ben Parsons:
Interestingly I really don’t drink red wine anymore. Occasionally I’ll drink some Pinot Noir, but I much prefer drinking white wines. I think a lot of people in the industry crave acidity, and yeah, my reasoning is a good example.
The general consumer in the U. S. still thinks that all raisins are sweet. I think that’s just a common misconception, that’s purely a stylistic choice from the winemaker, and my choice is to allow the yeast to ferment all of the sugar until there is no residual sugar.
To have a wine with high natural acidity that pairs well with food. That’s my choice as a winemaker. Those are the wines that I enjoy most that kind of just leave your palate just like this rasping acidity. Take the enamel off your teeth, and but have beautiful aroma.
Our Riesling is starting to show some characteristics from being in the bottle for 18 months. Where it gets those kind of, it’s tough to say about making it sound bad, but those more kerosene-y , kind of petroleum, kind of eraser like notes, which are very typical of Riesling, intertwined with really nice citrus and green apple.
Yeah, and like really just good structure. That benefits from growing at elevation here for sure.
Joe Winger:
Petit Verdot is probably lesser known, less popular, but it deserves all the love anyway.
Ben Parsons:
Petit Verdot, interesting, like one of the six red Bordeaux grape varieties. Bordeaux is maritime climate. It’s much cooler than Colorado.
It doesn’t really get the chance to ripen as well as it does here. So when it can ripen, it doesn’t just need to get blended into Cabernet Sauvignon or something to just give it more tannin and more structure.
Here it can stand alone as a single varietal.
The greenness is gone. The tannin is not like just rip your face off tannin. It’s well developed. Like silky, velvety, firm, but not like really dry and like Petit Verdot can be. Aromatics are very lifted on it, and it’s not a massive red wine by any means.
That’s grown at a vineyard about half an hour from Box Bar called Canyon of the Ancients and that vineyard was planted in 2006.
Unfortunately we only made about 99 cases of that wine. It’s fun to introduce people to wines that they probably haven’t heard of, but wines that that can stand up to any good red wines that you may have heard of.
Palisade Colorado Winemaker Ben Parsons reveals his Favorite Food
Joe Winger:
Do you identify yourself as a foodie? Can you pick 1-2 of your bottles and your favorite dish for dinner tonight?
Ben Parsons:
Yeah I would definitely pair my Riesling with a Thai curry or even a panang curry. I think it does really well with oriental food that has some level of heat to it. But also I think it does really well with a charcuterie plate, some almonds and some cheese. I think you can’t go wrong with that.
Then my Petit Verdot, for example I think there is more tannin in there. For those of us that like the light grilling you couldn’t go wrong with serving that with a ribeye. It’s delicious. Or if you’re cooking a little heartier food in the winter, maybe a lasagna. Something that can really work with that tannin.
I think my wines do well with a lot of different food just because of the balance that they have, they’re not going to overpower the food and vice versa, which is what it’s all about.
But I also enjoy them, just having a glass on its own, to be honest. When I get home from work, sometimes I love that.
Joe Winger:
I’m watching your Instagram videos quite a bit, and it seems like you’re having a lot of fun sharing knowledge, showing your vineyard, showing what it’s like day to day.
Ben Parsons:
The one time that I do enjoy social media is when you’re in the vineyard or you’re doing something that seems that other people might never have seen before.
I’m in awe of where I am because I feel like it comes across in those videos. It’s pretty down here today, and those are beautiful vineyard sites.
Or if you’re filtering a wine or racking a wine or, trying or shoveling grapes.
Just the imagery comes across and really shows how much work is involved in it. I always struggle when it’s like go take a photo of a bottle of wine in front of a restaurant. I don’t know how you make that look cool.
