SummerStage will celebrate the 50th anniversary of hip-hop this season. On Juneteenth (June 19), hip-hop royalty lands in Central Park with one of the greatest hip-hop producers ever, DJ Premier, along with Grandmaster Flash – whose rap group, Grandmaster Flash and the Furious Five – were the first to ever be inducted into the Rock and Roll Hall of Fame in 2007. Also, a free event.

How’d a Start-up Partnerswith NYC 3 Star Michelin Restaurant Eleven Madison Park?

For most foodies, it’s a dream to even have dinner at a 3 Star Michelin restaurant like Eleven Madison Park.  But how do you go a step further?  Imagine being a food start-up company who gets to partner with a legendary New York 3 Star Michelin restaurant.  How’d they do it?

Let’s find out in an exclusive interview with Mellody Food’s Darko Mandich.

Darko Mandich is a food entrepreneur in San Francisco. After spending almost a decade in the European honey industry as a business executive, Darko committed to reimagining the honey industry to become sustainable. Darko immigrated from Europe to California to launch Mellody, the world’s first plant-based honey brand. Darko is an advocate of saving the bees and wild pollinators.

Recently, I had a chance to talk with Darko.

 

Eleven Madison Park is a 3 Star Michelin restaurant, one of New York’s most esteemed fine dining venues. How did you start that relationship?

 

Yeah, thank you for asking that question, because this is an opportunity to tell the story. It started at the beginning of 2022. We were busy with our process of making this honey. Still not having the final product and bringing it to the market, but we’re getting there. I was really excited with what our team was delivering at that time. And I started thinking, okay, at some point sometime soon we’re gonna have a sample, and who should test that sample?

The reason why this sample was important is because it was a one ounce jar, like a very tiny jar, but the cost of that sample was $300,000.

 

I was thinking who should open this? Who should be the person to taste this? And that week I came across this podcast featuring Chef Daniel Humm, leading one of the most well-known restaurants in the world, Eleven Madison Park.

 

[On the podcast he explained…] When covid kicked in, it taught him a lesson about the importance of the interaction of foods and the world around us, and how the stories around if the virus came from an animal. That inspired him to think more about the interaction between animals and people. And he took this responsibility as a chef to really think about what he wants to do next. And what he wanted to do was one of the boldest moves in the world. To transform a well-known restaurant that serves all kinds of products, including meat to a fully plant-based restaurant.

 

So this Chef from Eleven Madison Park, the finest French cuisine. [Food and fine dining] experts were very skeptical about that decision. But what I really cared [about as a person] at that time is that there was someone who took responsibility to reflect on his own role in the food industry. And that immediately connected me with my story of being part of the honey industry before working with bees, and now taking the responsibility to build the future that’s kinder and sustainable.

I said to myself, we have to get to this person. He should be the one to taste [our] $300,000 one ounce of honey made without bees.

 

So, I reached out to my network to [find ways to] send them a sample.

In that process, I got to learn a lot about high-end, Michelin Star restaurants and how they operate. It wasn’t going to be easy or straight-forward to do.

So my co-founder and I, we decided to book a dinner at the restaurant. They just re-opened and [so even booking a reservation was hard.] We flew from San Francisco to New York, show up as regular guests for dinner. We loved the dinner, we loved the food. And then we asked if someone from their team would talk to us, that was just the beginning of it.

They were very excited. They quickly assembled a panel of people and they wanted to hear what we had to say. For me, that was really amazing. That was a dream come true.

As a kid growing up in Eastern Europe and thinking about the impact I wanna make in my career, I never thought that I’m gonna be having a company in San Francisco and then pitching to the highest culinary authority of the food industry honey without bees.

That was the beginning of the relationship.

They are very careful around the food that they incorporate. [While] they are a plant-based restaurant, they don’t usually work with mainstream plant-based brands that they don’t believe in the level of their quality. So for us it was a big honor.

Seeing our company brand next to the brand of the best plant-based restaurant in the world is really amazing.

From the time you’re at the restaurant Eleven Madison Park that night to getting the deal, what did that journey look like?

What lessons did you learn from going through that process?

 

From the “cold dinner” to this jar, was hundreds of hours of conversations. And what I learned as a business owner is that conversations are necessary for trust to be built.

 

If there’s a culinary authority with 3 Michelin stars and so many awards, and [then another company] basically a new company, a startup, there’s a big dis-balance in terms of authority and brand equity and the image and reputation.

 

When they asked us how it’s made, let’s go beyond the ingredients list. Let’s show them the photos of the plants that we source. Let’s tell them a story of where these plants are found. Let’s tell them the story of the terroir. Because if you think about all these future of food products, all these companies creating the new industries, these companies are led mostly by amazing scientists who know how to make products in a different way.

 

But what’s very often forgotten, this culinary story, the story of terroir, the story of the plants around us. And I think the Eleven Madison Park team was amazed to see the other side. A bunch of experts who are forward thinking, who understand that we wanna advance towards a better process, a better product, but we also don’t forget the nature around us, and we are actually doing this for the nature that’s around us.

 

So I think that level of thoughtfulness, attention to detail, and our ability to go the extra mile for them, I think that paid off.

 

So all of that plus lots of patience because these people take time to move, these are the best culinary minds in the world.

 

When we would be following up, I would be adding more, “Here’s something more on that plan. Here’s the report on the bees. Here’s the video that we did.”

 

Last year in May, there was kind of a mid-step [in the process]. We pitched them this idea to partner for World Bee Day, which is May 20th.

 

So for May 20 2022, we pitched the idea of organizing an event at Eleven Madison Park and invite The Mayor of New York, investors, people from the business community, the United Nations diplomatic core. Invite all these people to taste Michelin star food made with our product, a specialty menu for dinner.

Today we walk through a decadent and delicious multi-course meal. 

 

Executive Chef Maxime Kien explains:

 

Tonight you’re gonna be tasting all the new dishes that started two nights ago. The idea would be to transition from what was done in the past and now with me coming in and bringing a different vibe.

 

People think about French food and they think about heavy food, a lot of butter, a lot of cream, strong flavors, but sometimes it’s depending on which part of France you come from, it’s gonna be something completely different.  If you drive for 30 minutes, it may feel like it’s the same region, but no, it’s gonna be different aromas, different flavors, different techniques. 

So tonight is going to be some dishes that we just started that are going to be a little bit more on the lighter version as we approach spring and summer.

I believe a good idea would be to start with the leek salad. It’s very light. The idea of taking a simple product [such] as a leek and then making it as your starter dish. I’m not trying to be pretentious. You can go anywhere in the city and you will not find a leek salad on any other menu besides us. I did that menu for my tasting for Emil (Stefkov), the owner, and he absolutely loved it.

And that, to me, was good recognition to put that on the menu because it’s simple it’s rustic, but it’s very flavorful; and you’re not gonna find it anywhere else. 

After that, the scallops. That’s another dish that I did for Emil and everybody loved it. And so we’ll be able to see dishes that have just gotten started.

 

I explain to Chef Max that I always look for a “story” within the courses, from starter to entree to dessert and more.  Is he telling a story with his courses? 

 

My story is: simplicity is best. I don’t try to do an overly-complicated dish that you’re not gonna be able to understand. So simplicity.  Taking a beautiful product as simple as a leek, [deciding what’s] gonna complement it, and it’s gonna give you a chance to be able to taste something that hopefully you’ve never tasted before, or not in that fashion at least. Being able to say, ‘Oh, you know what? That leek salad was so simple that it was beautiful. That’s what I’m trying to accomplish. That’s the whole story.’

This was presented exactly as I could have wished for.  Per Chef Max’s suggestion, it was a simple dish, delivered incredibly well.  It was heaven to look at, smell and taste.  By my third bite, I still wanted more.

A perfect combination of flavors.  The white fish was tender and flavorful.  The carrot, onion side was a partner without ever overwhelming the star of the plate.  Highly recommend.

Kosher Food & Wine Experience (KFWE) returns to Cheslea Piers NYC for 17th Annual visit previewing 100s of new Kosher wines, spirits, top chefs, caterers, restaurants.

NJ based Royal Wine Corp, the largest producer and importer of premier kosher wines and spirits kicks off the 17th Annual Kosher Food & Wine Experience (KFWE) with a return to Chelsea Piers in NYC, Feb 6.

The ‘not-to be missed’ event featuring a vast array of premier wines and spirits from around the globe – filling Pier 60 from end to end – will also highlight Royal Wine’s growing portfolio of Passover wines to consumers, industry professionals and oenophiles alike.

Guests will enjoy six hours of nonstop wine and food tasting

Thousands of bottles of wine representing more than 60 wineries from the world’s best-regarded regions will be poured throughout the evening for all to taste and savor.

Novelties include:  Rimapere Sauvignon Blanc from New Zealand’s Marlborough

region, part of the Edmond de Rothschild Heritage estates; Razi’el, the new winery of the Ben Zaken family and owners of Israel’s flagship boutique winery Domaine du Castel, will be present with its traditional method rosé sparkling wine and its award-winning blend of Syrah and Carignan.

While Royal Wine has had an impressive selection of prestigious wines from Bordeaux such as Château Giscours and Pontet-Canet, the kosher wine importer, négociant and distributor continues to add outstanding names to its repertoire. Château Bellefont-Belcier, a Grand Cru Classé from Saint-Emilion, is the latest producer to join the kosher wine bandwagon with a kosher cuvée 2020 vintage – an excellent vintage for the region. Château Léoville Poyferré, a Grand Cru Saint Julien which has been making kosher cuvées since 1999 will also be present at KFWE with its 2020 vintage, marking the 200th anniversary of ownership by the Cuvelier family.

There are many great appellations in France beyond Bordeaux, such as the Rhône Valley. One of Rhône’s most respected estates will be represented at the wine show with the introduction of its first two kosher wines: Raymond Usseglio Châteauneuf-du-Pape, and Raymond Usseglio Châteauneuf-du-Pape Vieilles Vignes.

From Tuscany, Villa Mangiacane will present Magnificus, a Super Tuscan blend of Sangiovese, Merlot and Cabernet Sauvignon.

Herzog Wine Cellars, Royal Wine’s own winery located in Oxnard, CA, will showcase its line of award-winning wines, including the value line Baron Herzog as well as its high-end Napa Valley-grown Herzog Generation VIII. David Galzignato, Herzog’s new Senior Director of Winemaking Operations, will be on hand at KFWE 2023 to answer questions about the many wines he oversees.

Jill Scott is a three-time Grammy Award-winning singer-songwriter, New York Times best-selling poet, critically acclaimed actor, and multimedia entrepreneur.

She released her much-anticipated debut record, “Who is Jill Scott? Words & Sounds, Vol. 1,” in July 2000, which became a double platinum album that earned Scott several Grammy nominations, including Best New Artist.

What started as the 20th-anniversary tour of Jill Scott’s chart-topping, genre-defining album, Who Is Scott?: Words and Sounds Vol I in 2020 ended prematurely due to the COVID-19 pandemic.

But good news prevails: in 2023, the tour will resume, electrifying auditoriums, theaters, and music halls throughout the nation in celebration of a moment and movement that continues to enthrall music lovers of all ages and backgrounds.

Scott will play the iconic album front to back, with hits from her iconic debut album, such as “Gettin’ in the Way,” “A Long Walk” and other musical stories. The tour, produced by Live Nation Urban, will play in over 20 markets across the country, with special multi-show residencies in Washington, D.C. at the MGM National Harbor on Mother’s Day weekend and Scott’s hometown of Philadelphia at The MET Philadelphia, marking the first time the North Philadelphia native will play at the storied North Philadelphia venue.

The Philadelphia stop also includes a fundraiser at the Arden Theatre in support of her non-profit, the Blues Babe Foundation.

“My band and I were so excited three years ago, but that damn COVID shut us down,” said Scott.

Though Scott had to pause performances during the pandemic, she celebrated the milestone virtually and continued building her brand as a multimedia entrepreneur, launching Jill Scott Presents: J.ill the Podcast” in November 2020 alongside co-hosts Laiya St.Clair and Aja Graydon-Dantzler. The universally-loved podcast currently has 80 episodes and continues to grow in popularity and influence. Scott also participated in the first woman vs. woman Verzuz battle in May 2020, starred in Lifetime’s Highway to Heaven and BET+’s The First Wives Club, and in September 2021, she became the face of Nationwide, bringing a fresh take on a familiar campaign and putting her soulful spin on the iconic jingle.
