You keep reading about plant-based honey. The environmental story, the nutrition. But how does it taste? What can you pair it with? Let’s find out in an exclusive interview with Mellody Food’s Darko Mandich.
Darko Mandich is a food entrepreneur in San Francisco. After spending almost a decade in the European honey industry as a business executive, Darko committed to reimagining the honey industry to become sustainable. Darko immigrated from Europe to California to launch Mellody, the world’s first plant-based honey brand. Darko is an advocate of saving the bees and wild pollinators.

You said you are a foodie. What are some incredible food pairings that you recommend with this honey?
When I like to talk about food, I always like to join food and beverage.

What does Plant-based Honey Pair Well With?
I’ll start with beverages first. I think this honey is perfect for mocktails and cocktails. It gives just enough of sweetness that someone is looking for in their alcoholic cocktail or non-alcoholic cocktail.

In terms of food, I would split it into savory and sweet. Sweet applications are my favorite, I just have a sweet tooth. My favorite dessert is Baklava because it comes from the part of the world where I come from. My wife, who’s a home chef, [used our honey to make] baklava and it was amazing.
We did an amazing collaboration with an upscale Italian plant-based restaurant in San Francisco Baia. They created this amazing, vegan panna cotta with our honey on top. It was culinary mastery developed by Chef Joshua Yap, who started working with Chef Matthew Kenny, who is also a well-known, plant-based chef.

In terms of savory applications, that opens a whole new world of opportunities. How we interact with stuff like pizza and honey, burgers and honey. Obviously honey and vinaigrette and olive oil, used as a dressing for salads, honey mustard, just name it.
What’s next for Mellody? What are the next steps out there for you?
Getting into as many restaurants as possible in this country. People are inquiring about the standalone product [separate from the speciality box] get it very soon at Eleven Madison Home.
Working on getting this product to as many people as possible, and just to invite everybody to participate in this mission of creating the sustainable future of honey.
I’m just excited about every tiny step in this journey until melody becomes the word for honey.

St Pierre Brioche Thanksgiving Stuffing

Ingredients
1 loaf St. Pierre Brioche Bread
1/2 cup unsalted butter
1 medium onion, diced
3/4 cup celery, diced
3/4 cup carrots, diced
1 cup mushrooms, diced
2 large eggs
1 tbsp. fresh rosemary, chopped
3 sprigs fresh thyme, just the leaves
1 tbsp. fresh sage, chopped
1 small apple (granny smith works well), peeled and diced
Salt and pepper
Directions

Preheat oven to 350 F. Cut brioche bread into 1” cubes and bake for about 10-15 minutes until toasted.

Meanwhile, into a pot over medium high heat add butter until melted. Add onion, celery and carrots and cook until everything starts to soften, about 7 minutes. Add mushrooms and cook for 2 minutes longer. Remove from heat and set aside.

Into a bowl whisk together the eggs, herbs, apples, mushrooms, and salt and pepper. Add your cooked vegetables and mix to combine.

Pour mixture on top of toasted bread and stir to combine. Bake stuffing for about 45 minutes. If your stuffing starts to get too brown, cover until finished baking. Enjoy!

Co-written by Ian Shaw and Joseph Nixon, this new Olivier Award-nominated comedy imagines what happened on board “The Orca” when the cameras stopped rolling during the filming of Stephen Spielberg’s blockbuster, JAWS.
FADE IN: The open ocean, 1974. Production on JAWS is delayed…again. The film’s lead actors—theatre veteran Robert Shaw and young Hollywood hotshots, Richard Dreyfuss and Roy Scheider—are crammed into a too-small boat, entirely at the mercy of foul weather and a faulty mechanical co-star. Alcohol flows, egos collide, and tempers flare on a chaotic voyage that just might lead to cinematic magic…if it doesn’t sink them all.
The smash-hit of the 2019 Edinburgh Festival Fringe, THE SHARK IS BROKEN opened at the West End’s Ambassadors Theatre in 2021 to critical acclaim and an Olivier Award nomination for Best Comedy Play, extending its limited run in 2022.

Alex Brightman
Alex Brightman (Richard Dreyfuss) is a two-time Tony-nominated actor for his performances in Beetlejuice the Musical and School of Rock. Other Broadway credits include Matilda, Big Fish, Wicked and Glory Days.
Alex can be seen on the current (and final) season of “The Blacklist” on NBC as forensic analyst Herbie Hambright. Other TV credits include “Law & Order: SVU,” “Documentary Now!,” “The Good Fight,” “Blue Bloods,” and “Important Things with Demetri Martin.” Alex is the voice of Pugsley/Temeluchus on the acclaimed Netflix animated series “Dead End: Paranormal Park” as well as the voice of Fizzarolli on “Helluva Boss.”
As a writer, Alex has developed series with NBC, Universal, 20th Century, and Warner Brothers. Alex’s play, Everything Is Fine, recently received a developmental reading at Manhattan Theatre Club directed by Cynthia Nixon. He dedicates this performance to those living with chronic pain and illness and urges you to check out and donate to The Arthritis Foundation. Alex has a dog named Kevin and two adorably awesome nieces.
Colin Donnell (Roy Scheider) can most recently be seen as the lead of Peacock’s “Irreverent.” Colin is known for his work as Dr. Connor Rhodes in NBC’s drama “Chicago Med” and as Tommy Merlyn in CW’s “Arrow.” Other appearances include Scott Lockhart in Showtime’s hit series “The Affair”, “Pan Am,” “Person of Interest” and “The Mysteries of Laura.”
His film appearances include Every Secret Thing, which also starred Diane Lane and Elizabeth Banks, and Almost Love opposite Michelle Buteau.
On stage, Colin Donnell recently starred as Russell Hammond in the musical adaptation of Cameron Crowe’s acclaimed show Almost Famous at The Old Globe.
His Broadway work includes Violet, Anything Goes (which garnered him Drama Desk, Outer Critics and Astaire nominations), and Jersey Boys. Guy Masterson (Director) is a London based, multi-award-winning theatre producer & director with over 150 credits over 30 years. A 29-year veteran of the Edinburgh Festival, he has produced or directed many of its biggest hits including THE SHARK IS BROKEN in 2019 – which was subsequently produced in the West End in 2021 by Sonia Friedman Productions and received an Olivier Nomination for Best New Comedy. His 2009 production of Morecambe also transferred to the West End and won an Olivier Award for Best Entertainment. His 2003 production of 12 Angry Men became the biggest grossing drama at Edinburgh – a record broken by his subsequent productions of One Flew Over The Cuckoo’s Nest (starring Christian Slater), and The Odd Couple (with Bill Bailey and Alan Davies) which he also directed. Other acclaimed productions include Scaramouche Jones, Adolf, Austen’s Women, Absolution and Playing Burton (a solo play about his uncle, Richard Burton). Most recently, he co-directed an award-winning original musical, The Marvelous Elephant Man in Australia. NY’s Time Square is getting a Massive Update
A visitor’s center with a viewing deck is coming to Times Square
Times Square is about to undergo a massive update.
Real estate investment and management firm just announced the $500 million redevelopment of the 118-year-old building One Times Square, which is actually the home of the iconic New Year’s Eve Ball drop celebration.

The revamped building will officially turn into a modern-day visitor center with a new viewing deck and a museum—and it will be open to the public for the very first time in decades.
According to a press release, the new viewing deck will allow visitors to take a close look at the famous New Year’s Eve Ball all the while reveling in elevated views of the neighborhood. The museum, on the other hand, will explore the history of the building and Times Square as a whole, obviously also delving into the importance of the annual midnight celebration.
There’s more: the 26-story building on 42nd Street will also become a destination for branded experiences that will take over 12 floors and, according to the press release, “include digital, virtual and augmented reality integrations.”
The redeveloped building interior is projected to open to the public in the summer of 2024.
“Times Square has served as the crossroads of the world for more than a century, and One Times Square is at the center of that global stage,”
said Michael Phillips, president of Jamestown, in an official statement.
“The building’s next chapter will build on that legacy, creating a new destination in the heart of Times Square for the next generation. With a focus on providing experiences enhanced by technology, the project is representative of the future of real estate and the integration of the physical and virtual worlds. We are reimagining how spaces can be experienced by leveraging the power of AR technology and creative storytelling.”

Lest you think the major update will change the way Times Square looks like for the duration of the 27-month-long construction period, think again: the north facing LED signs on the facade of the building will continue broadcasting advertisements throughout the time and the famous Ball will also stay in place.
