Striking workers in the entertainment industry aren’t just receiving support from the wealthy top Hollywood actors. They’re also getting help from small businesses, like two restaurants in New York City.
Just around the corner from the Theatre District: Marseille and Nizza
Just around the corner from the Theatre District on 9th Avenue by 44th Street are two restaurants: Marseille and Nizza. Both owned by the same company.
They both are now offering free meals to striking actors and writers any night of the week after 9 p.m.
“It’s just our way of giving back to the community that has supported us for so long,”

The restaurants are asking strikers to present their union card and take care of their own liquor bill, tax, and tips.
At the end of the strike, if the entertainers can pay back for all their meals, great. If they can’t, their running tab will be forgiven.

St Pierre Brioche Thanksgiving Stuffing

Ingredients
1 loaf St. Pierre Brioche Bread
1/2 cup unsalted butter
1 medium onion, diced
3/4 cup celery, diced
3/4 cup carrots, diced
1 cup mushrooms, diced
2 large eggs
1 tbsp. fresh rosemary, chopped
3 sprigs fresh thyme, just the leaves
1 tbsp. fresh sage, chopped
1 small apple (granny smith works well), peeled and diced
Salt and pepper
Directions

Preheat oven to 350 F. Cut brioche bread into 1” cubes and bake for about 10-15 minutes until toasted.

Meanwhile, into a pot over medium high heat add butter until melted. Add onion, celery and carrots and cook until everything starts to soften, about 7 minutes. Add mushrooms and cook for 2 minutes longer. Remove from heat and set aside.

Into a bowl whisk together the eggs, herbs, apples, mushrooms, and salt and pepper. Add your cooked vegetables and mix to combine.

Pour mixture on top of toasted bread and stir to combine. Bake stuffing for about 45 minutes. If your stuffing starts to get too brown, cover until finished baking. Enjoy!

Darko Mandich is a food entrepreneur in San Francisco. After spending almost a decade in the European honey industry as a business executive, Darko committed to reimagining the honey industry to become sustainable. Darko immigrated from Europe to California to launch Mellody, the world’s first plant-based honey brand. Darko is an advocate of saving the bees and wild pollinators.

Recently, I had a chance to talk with Darko for nearly an hour.
Let’s talk about the honey. What’s the taste profile?
There are three aspects of products that people care about. Number one by far is taste. Number two is price, and number three is nutrition.
In terms of the taste, what we’re really after is the best tasting honeys that are made by bees.
The taste has to match rare honeys that you would find in parts of Europe; France, Italy. Very high quality Acacia honey, specifically.
If we talk about New Zealand, Australia, that’s Manuka honey; and we’re matching that.
So no compromise there.
Moving to the price, I grew up in poverty and I really want to make sure that everybody has access to this product at some point. But it’ll take us some time. So right now it’s premium quality, but it’s also premium price.
In terms of nutrition, we wanna do better than honey coming from bees. How? First and foremost, honey made by the bees contains a certain bacteria that’s called Clostridium. With our product, without the bees [there’s no Clostridium] bacteria.
I’m really proud to say that our product is allergen free; and that for people with allergies to honey and pollen, this is gonna be neutral.
Finally in terms of super ingredients or superfoods, our honey has more than what’s usually found in some of the honey types made by the bees.
The sugar profile is the same, the calorie content is the same, but the twist is there’s a little bit more of certain powerful active compounds that come from the plants.
That’s absolutely incredible. It’s enhanced honey. Is there a better word?
I like to call it a plant-based honey. And that category of plant-based honey is already elevated to the level of being enhanced compared to bee-made honey.
I’m really happy that Melody is starting this category. We are the world’s first plant-based honey.
There’s exactly one same sentence that we get to hear across 5,000 people that were involved in tasting this before it hit the market.
That sentence is: It’s honey.
People taste it, they’re amazed with it, and they say, “Oh my God, it’s honey.”
There are certain plant-based products that have their heart in best place in terms of mission and impact, but are just not delivering on [flavor] expectations. We just want to make sure that people across different categories of nutrition say that this is honey and that they love it.

The Penin Guide, first published in 1990, is the most comprehensive Spanish wine guide in the world. With editions in Spanish, English, German and Chinese, it is the most widely used tool for amateurs and professionals to make purchasing decisions on Spanish wine.
It’s a must-have resource for restaurants, wine shops and critics.
Part of the event featured a masterclass on Spanish regions, ‘Homage to Our Rivers’ led by Ana Riaz.

While Spain’s rivers haven’t reached the wine trade fame that classic European wines rivers like Rhone, the Loire, the Po or the Garonne mostly because they were very difficult to navigate.
But Spain’s rivers have created a more important element for their region’s wine – and that is the discovery of this masterclass.

As we taste through the areas and learn how each Spanish region’s flavor and aroma is tied to their rivers. With peaks, valleys and their overall geology has created some of today’s most outstanding Spanish Vineyards and generations of Spanish winemakers who have taken care of the vineyards.

In Galicia at the “top left corner” of Spain, the topography has been excavated by jagged river valleys. At the mouth of the large river, where the tide meets the stream is locally called “Rias”.

Duero is an area with a long wine history and surprising diversity also known as “the backbone of Spain’s Northern Plateau.”
Growing their grapes more than 800 meters above sea level and under extreme Continental climate.
Duero offers wines of great character from two distinct areas: Rueda, a region specialized in white wines, and the famous Ribera del Duero, specifically the so-called “Golden Mile”.

Deep gold in the glass. Aromas of guava, papaya. Velvety dark chocolate, cocoa beans and vanilla on the palette. Pair it with roasted chicken, mushroom risotto.

Medium ruby. Minty and herbal aromas, more herbaceous and less citrus. Palette brings cedar, clove, with a soft finish. Pair this with meat-heavy charcuterie, meaty lasagna.
River Ebro On the Mediterranean Side of Rioja
Upper Rioja is where Spain’s wine story began and the origin of Bodegas Ramon Bilboa.

Medium ruby in the glass. Raspberry, red currant on the nose. Intense tomato, bell pepper, white pepper and mint flavors. Sweet vanilla. Well balanced, smooth tannins, long finish. Enjoy this paired with poultry or pork with spicier toppings or sides like red pepper and paprika.
River Tiron Valley, North of Rioja
The Ebro, a section of the Rioja Alta, is a fertile, wine-growing area. It receives the water from the river Tiron, a perfect mix of Mediterranean, Continental and Atlantic influences.

Deep purple in the glass. Blueberry, blackberry, black currant, black plum on the nose. Palate shows ripe red currant with tobacco and leather. Medium body, good structure, medium finish. Pair it with a steak.

Inky purple in the glass, aromas of raspberry and espresso bean. Heavy body on the palate, with flavors of cassis, pomegranate, tobacco, coffee. Plush tannins with a long finish. Pairs well with grilled BBQ and gamey meats.

According to their website, their winemaking uses varying amounts of whole cluster during fermentation with ambient yeast, minimizing extraction.
Harvesting dates are chosen to retain acidity/freshness balanced with phenolic ripeness and maintaining moderate alcohol levels.
Then the wine is fermented in small batches and aged in a low impact mixture of new and neutral French oak barrels.

Grapes are sourced from Von Oehsen Vineyard in the Eola-Amity AVA at an elevation of 400-500’. Harvested in early September 2021. Crushed then pressed, fermented in barrels. Stored on lees with minimal battonage. 42% new oak from a Damy puncheon.
Medium gold in the glass. Light and delicate on the nose. Lemon, peach, orange blossoms. Crisp citrus, orange blossom, dried fruit flavors.
With only 109 cases produced, this is a special bottle. If it’s still available, buy it immediately and hold onto it for a special night.

Complex is too simple of a word for this bottle. It delights in throwing you twists and turns; and taking your mouth for a ride.
Grapes sourced from Witness Tree Vineyard in the Eola-Amity AVA at 500’ elevation. Harvested early September 2021. Fermented using 38% whole cluster. Aged in 40% new oak oak.
Deep ruby in the glass. Medium body with blackberry, black currant on the nose. White pepper, licorice, dried herbs, A multi-dimensional flavors, while still being light on the tannins.

This bottle deserves to breathe. Seriously. Open it, decant it, savor it. But whatever you do, don’t rush it. Let it be a marathon and your mouth will thank you.
The winery itself describes it as “a richer, darker wine” and they’re not wrong.
Sourced from Prophet Vineyard in Eola-Amity AVA at a 440-600’ elevation. Harvested mid- September 2021. Fermented using 25% whole cluster. Aged with 20% new oak.
It transformed from a kitten to a tiger after giving it substantial breathing time. Deep ruby in the glass. Medium body. Blackberry, blueberry, raspberry on the nose. Velvety pleasures in the mouth. Bell pepper, dried spice. A sultry finish. Highly enjoyable.
With only 120 cases produced, I would stand in a long line just to taste this wine again.

A unique wine, unique flavor, for a unique palette.
Grapes sourced from Le Cadeau vineyard at 600-700’ elevation in the Chehalem Mountains AVA. Harvested mid-September 2021. Fermented using 27% whole cluster. Aged with 25% new oak.
Medium ruby in the glass. Red currant and cranberry on the nose. Heavy cranberry on the palette. An elegant wine with tart acidity. The tart acidity wasn’t my favorite choice. I admire how it kept opening. I struggled to find a food pairing and found it bold on its own. I always enjoy tasting unique wines. Perhaps I’d like it more next time.
